Skeptical of roast date

Ordered three bags of beans at the same time and they all had an identical roasted on date which corresponded to my date of order. I’m rather skeptical, because as I’ve read, coffee needs to air sit for at least a week if not 2 after roasting for ideal flavor. Can Per’la please explain what these roast on dates actually mean?

Really nice

I use a medium-course grind and I think it brings out the flavors well. I can taste the notes of chocolate and raspberry, especially with cream and letting it cool off.

Consistent, balanced blend

I love this blend for a morning cup or two — it’s fragrant, bright but not too much acidity and has a lingering taste of chocolate and subtle red fruit notes. Just smelling it brewing makes the morning better!
